Weißkraut Suppe


CABBAGE SOUP



1 ½ lb. cabbage

½ cup onions (diced)

3 tablespoons butter or margarine

5 cups water

3 bouillon cubes

½ teaspoon Italian seasoning

¼ teaspoon minced garlic

1 large potato

3 hot dogs (sliced)

salt and pepper



Wash cabbage and shred into thin slices. Melt butter or margarine in a large kettle, add onions and sauté until glassy. Add shredded cabbage and sauté for 5 minutes. Pour in the 5 cups of water, Italian seasoning, garlic and bouillon cubes and bring to a boil. Simmer for 1 hour. Peel potato and cut into small cubes. Add to soup with the hot dog slices and simmer until potato is tender. Season with salt and pepper.



Serves 4
