CUCUMBER SALAD


Serves 4


2 medium cucumbers 1 1/2 tablespoons sugar

1 1/2 tablespoons cider vinegar 1/2 teaspoon salt

1/8 teaspoon pepper 1/2 cup sour cream

1 tablespoon minced parsley


Slice cucumbers paper thin, sprinkle with sugar, vinegar, salt, and pepper and marinate 20 minutes. Drain, discarding liquid, and mix cucumbers with cream. Sprinkle top with parsley.

TOMATO SALAD


Serves 4


5 medium tomatoes, chopped 1 teaspoon sugar

1 teaspoon salt 1 teaspoon dried basil

1/4 teaspoon dried thyme 1/4 teaspoon pepper

1/2 vegetable oil 6 tablespoons vinegar

1 tablespoon Worcestershire sauce 1 large onion, diced


Mix together all ingredients, chill at least 1 hour. Serve on lettuce leaves.
