ROTE GRÜTZE

RED FRUIT PUDDING




2 cups German red currant juice 2 cups German raspberry

1 strip lemon peel ½ - 1 cup sugar

½ cup corn starch ½ cup Moselle* wine

Moselle wine (white wine) or

lemon juice to taste


Heat juices and lemon peel. Dissolve sugar in Moselle wine and add to hot fruit juice. Add sugar, tasting for sweetness, and stir until sugar dissolves. Bring to a boil, stirring constantly, and continue to cook until mixture is clear and thick. Turn heat down and simmer 3 – 5 minutes. Add extra lemon juice or Moselle wine to taste, pour into individual dessert glasses and chill until set.
