HAM CASSEROLE
1 cup ham (diced)
8 medium potatoes (cooked and sliced)
1 medium onion (sliced)
1 4oz. can mushroom (stems and pieces)
4 eggs
5 tablespoons milk
2 tablespoons butter or margarine
salt and pepper
1/3 cup Parmesan cheese
Grease a casserole (2 ½ quarts). Layer first with ½ potatoes; top with ham, onion, drained mushrooms; and top with the remaining potatoes. Beat eggs with milk and season with salt and pepper. Pour mixture over the casserole. Dot with butter or margarine and sprinkle with Parmesan cheese. Bake in a preheated oven at 400º for 30 minutes.
