HOLSTEINER KARTOFFELSUPPE

HOLSTEIN POTATO SOUP



To serve 6


1 ½ lbs. potatoes Salt

2 TB oil Nutmeg

½ cup leeks, chopped 2 medium onions, diced

1 turnip, diced ½ cup smoked bacon,

1 celery stick, chopped chopped

1 piece of pork rind ½ cup smoked ham, chopped

1 whole bay leaf 1 TB parsley

7 cups water


Peel the potatoes, wash, cut into pieces. In a 4-quart pot heat 1 TB oil and add potatoes, leeks, turnip slices, and celery. Stir for about 2 minutes, add water, bay leaf, salt and pepper, and the bacon rind. Let cook (covered) for about 50 minutes. Discard the pork rind and the bay leaf. Puree the soup with a mixer, heat again and adjust the seasoning to taste.


In a frying pan heat 1 TB oil and add the onion slices, bacon and ham pieces and brown, stirring constantly. Drain off the oil and the remainder to soup – do not stir. Top off with parsley.


Variation: As a main meal this soup serves 4. Slice 2 German Knackwürste, heat and add to soup. A nutritious fruit salad would be the perfect dessert.
