Kaiserschmarrn
Kaiserschmarrn is a type of pancake / omelette that is very popular in German speaking countries.
1 cup flour
3 eggs-separated
¼ cup sugar
dash salt
raisins
milk as needed
Mix flour, egg yolks, sugar and salt with enough milk to make a smooth batter. (Should just run off a spoon). Beat egg whites until very foamy (or stiff) and fold into batter.
Heat a small amount of butter or oil in a frying pan on medium heat. (An electric skillet on the pancake setting works great - you can make them on a desk top at school!). Pour a large, thick pancake to nearly fill the pan. Sprinkle with raisins. Brown on one side. Turn, brown slightly. Tear into pieces with two forks. Serve with lots of powdered sugar.
