MARBLE CAKE



2 sticks butter or margarine (room temperature)

3/4 cup and

1 tablespoon sugar

4 eggs

3 cups and

2 tablespoons flour

2/3 cup cornstarch

2½ teaspoons baking powder

2½ tablespoons cocoa

½ cup sugar

3 tablespoons milk

2 teaspoons almond extract

1 cup powdered sugar

1 tablespoon soft butter or margarine

2 tablespoons hot milk


Beat sticks of butter or margarine until creamy. Gradually ad 3/4 cup and 1 tablespoon sugar and eggs and beat for 10 minutes. Mix the flour with the cornstarch and baking powder. Add to the butter mixture and mix well. Take 1/3 of the batter, add cocoa, 1/2 cup sugar, 3 tablespoons milk and almond extract. Mix well. Spoon half of the light batter into a well-greased bundt pan, (10" x 4½"). Top with half of the dark batter. Repeat with the remaining light and dark batter. Take a knife and cut through the batter all around the pan. Bake in a preheated oven at 375º for 50-60 minutes. Take pan out of the oven and let it set for 15-20 minutes. Invert cake onto a platter. Mix powdered sugar with soft butter or margarine and hot milk. Brush over the cake.


Makes one bundt cake.
