MUSHROOM PIE
1 9" frozen deep dish pie shell
1 lb. mushrooms
1 tablespoon butter or margarine
1 cup whipping cream
½ cup shredded Edam. Gouda or cheddar cheese
4 eggs (beaten)
salt, pepper
1 tablespoon chives, chopped
Heat cheese with whipping cream until melted (do not boil) and set aside to cool. Wash mushrooms, slice and sauté mushrooms in the butter or margarine for 5 minutes. Drain all the liquids and place the mushrooms in the pie shell. Mix the beaten eggs into the lukewarm whipping cream mixture, season with salt and pepper, and add chopped chives. Pour over the mushrooms. Bake in a preheated oven at 425º for 30-35 minutes.
