GESCHNETZELTES-ZÜRICHER ART
VEAL STRIPS
Zurich Style
1-1/2 lbs. Pork, or veal, cut into thin 700 g Schweins-oder
strips Kalbsgeschnetzeltes
1 onion, chopped 1 Zwiebel, gehackt
1-1/2 cups mushrooms, sliced 300 g Champignons, in
Scheiben geschnitten
¾ cup white wine ¾ Tasse Weißwein
1-1/4 cup coffee cream 1-1/4 Tasse Kaffeesahne
1-1/2 tablespoons butter 20 g Butter
1-1/2 tablespoons flour 20 g Mehl
Salt, pepper, paprika, chopped parsley Salz, Pfeffer, Paprika,
gehackte Petersilie
Fry meat in oil. Keep warm. Fry onions and mushrooms in butter. Add wine, pepper, salt and paprika. Mix flour with butter into a ball and add to wine sauce. Add meat and cream and heat quickly. Top with chopped parsley. Do not overcook meat. Serves 4-6
